This was a quick and fun recipe for a healthy snack! My Dad was the one who really liked them, and I have tried a few different flavors now! This one was my first:
You will need:
- 1 1/2 cups unsweetened shredded coconut divided
- 2 cups Medjool dates pitted
- 3 tbsp cocoa powder
I had never used dates in anything before, but they are naturally sweet, so they work for a healthy treat!
I put the almonds and the dates in my food processer...
and gave it another good mix.
and then i rolled the dough into balls and then rolled them in coconut flakes
and then I took a taste test...
and then another...cause they were GOOD!!
You are supposed to put them in the freezer to firm up. I put mine in for about 30 minutes.I of course had to take another taste test after they were cold! The consistency was even fudgier AND THE TASTE WAS EVEN MORE CHOCOLATEY GOODNESS!

(BTW, we stored these in a ziploc baggie and they were totally fine for the 3 days they lasted before being scarfed up! Mom says they will easily last for a week or so.)
