Poop Nuggets of Joy! (aka Raspberry Truffles)

These three ingredients

 may look normal...

but when they are mixed together they are MAGIC!

First, put the raspberries in the food processor, and pulse them till they are like dust! Put them to the side for a minute.

Next, add the cream to the chocolate chips and microwave them for 45 seconds.

Give them a quick mix, and heat them for another few seconds if you need to till they are all melty and smooth.

Then add in the raspberries and mix well.

You are ready to form the poop nuggets of joy by rolling them in your hand,

and dip them in candy melts. (Candy melts are chocolate wafers you melt in the microwave fo candy dipping. You can get them at any wal-mart.)

So.....seriously, they really did look like poop nuggets, so I made a decorating plan! I melted some white chocolate and added some food coloring....

and turned the poop nuggets of joy into....

 Fancy truffles! So pretty, right?!?!?

Like, seriously, SO PRETTY!!!

and SO DELICIOUS!

You can find the recipe I used here.

So go enjoy some poo...I mean raspberry joy!

I'll see you next time back here in my kitchen!

Protein Balls for the WIN!!!

This was a quick and fun recipe for a healthy snack! My Dad was the one who really liked them, and I have tried a few different flavors now! This one was my first:

You will need:

  • 1/2 cup raw almonds
  • I had never used dates in anything before, but they are naturally sweet, so they work for a healthy treat!

I put the almonds and the dates in my food processer...

I gave it a good mix for like 2 minutes, then I added the cocoa...
and gave it another good mix.
and then i rolled the dough into balls and then rolled them in coconut flakes
and then I took a taste test...
and then another...cause they were GOOD!!
You are supposed to put them in the freezer to firm up. I put mine in for about 30 minutes.
I of course had to take another taste test after they were cold! The consistency was even fudgier AND THE TASTE WAS EVEN MORE CHOCOLATEY GOODNESS!
    Take a look....

So if you don"t have these 4 ingredients in your pantry, put them on your grocery list, and enjoy these tasty treats soon!
(BTW, we stored these in a ziploc baggie and they were totally fine for the 3 days they lasted before being scarfed up! Mom says they will easily last for a week or so.)

I'll see you next time back here in my kitchen!

    Pie Crust in a MUG?!?!?!?

Yep! Super easy, super delicious, and you can use it in a ton of recipes!!

    First you will need:

    2/3 cup of flour

    2tbsp sugar

    1/3 cup veggie oil

    wax paper

and the secret ingredient is 3 tbs COLD ICE WATER

    a BIG MUG

-add all the ingredients into the mug in that order and mix it with a fork

-pour out the mug onto a piece of wax paper and knead it into a smooth ball

    Then:

-lay another piece of wax paper on top and roll it out into a circle about the size of your pie tin

Here is a super easy way to get it into the pie tin:

You're going to peel off the top piece of wax paper, lay your pie tin on top, then flip the crust and wax paper into the pan! Peel off the wax paper gently, press it into your pan a bit and,....

Don't forget to fold down any extra edge!

I made 2 of these, and my mom made them for quiche that night.

A few days later, I made another pie shell and filled it with yumminess!

I peeled and sliced an apple, mixed it with some cinnamon sugar, and popped it in the microwave for about 3 minutes. Then put it on half my pie shell and folded it over! I baked it at 350 degrees for about 10-12 minutes and.....

Want a close up of the yumminess?!?!

You are going to want to click on that picture to really see the flaky goodness!!

So this pie dough can be used for lots of things, not just pie! Be creative with your fillings and see what you can come up with!

See you next time in my kitchen!

    Christmas CRACK!!! The good kind!

We had a great Christmas with LOTS of treats! This is one I wasn't really sure about, but, WOW, it turned out great!

The most important thing you are going to need is a big bowl. I mean a BIG bowl! I mean a REALLY BIG BOWL!

My friend Hannah is the one who showed me this recipe, and let us use her REALLY BIG BOWL! Mom bought us a REALLY BIG BOWL because....we are making this lots!

Take a look at these ingredients:

    And this recipe:
    • 3 1/2 Cups Golden Grahams
    • 3 1/2 Cups Rice Chex
    • 3/4 Cup Coconut
    • 1/2 Cup Slivered Almonds
    • 1/3 Cup Butter
    • 1/2 Cup Corn Syrup
    • 1/2 Cup Sugar
    • 1 Teaspoon Vanilla Extract

     Here's what you do:

    1. Begin by adding the Golden Grahams, Rice Chex cereal, coconut, and slivered almonds to a large bowl. Mix it up.

    2. Next, add the butter, corn syrup, sugar, and vanilla to a medium sized sauce pan.

    3. Heat the mixture over medium heat on the stovetop until the sugar has dissolved and it begins to boil.

    4. Pour the liquid mixture over the cereal mixture.

    5. Use a spoon to stir the mixture until all of the cereal is coated. Let it cool and eat!

We did not let it cool in bowl we let it cool on some wax paper. This is 4 feet of yum!

ooey, gooey, soft and chewy YUM

I was hesitant because it looked weird, but I  was brave and tried a bit...

                                                                         and then another bit....

    and then another bit...

and guess what.... it was AMAZING!!!
    Like so so A.MAZ.ING!!

You wanna go make some now!

I'll see you next time back here in my kitchen!

    Thanksgiving Pumpkin Treats!

Crunching leaves, acorns falling, wagon rides, and all things pumpkin! I love fall!

I especially love making these pumpkin muffins! I have made them a few times, and they are delicious and super easy!

    You will need:

    1 boxed spice cake mix

1 16 oz can of pumpkin

    1 egg

    1 cup of water

    1/2 cup chocolate chips

Preheat your oven to 350 degrees.

Go a head and mix together the cake mix, pumpkin, egg and water in your mixer or by hand. Stir in the chocolate chips.

Fill your muffins tins just to half way. It'll make 24 muffins, and you might have a little bit of batter left to make these cute mini muffins!

I like to eat them all cooled off, but my mom likes to eat them when the chocolate is all melty! Either way, they go great with a cup of milk or hot chocolate!

They would be a great Thanksgiving morning breakfast!

    So Sweet!

Cinnamon sugar is always a win!

Have you ever put cinnamon sugar on toast?!? This is even better!

    4 Tbs melted butter
    4 tortillas
    1/4 cup sugar
    1 big tsp cinnamon

    Preheat oven to 350 degrees

I used a pizza cutter to cut my tortillas into 6 pieces each, then I painted on melted butter with a pastry brush. I arranged them on a sheet pan, and cooked them for 8 minutes!

They turned out just the right amount of crunchy and just the right amount of sweet! They tasted just like cinnamon toast crunch!
