Thanksgiving Pumpkin Treats!

Crunching leaves, acorns falling, wagon rides, and all things pumpkin! I love fall!

I especially love making these pumpkin muffins! I have made them a few times, and they are delicious and super easy!

You will need:

1 boxed spice cake mix

1 16 oz can of pumpkin

1 egg

1 cup of water

1/2 cup chocolate chips

Preheat your oven to 350 degrees.

Go a head and mix together the cake mix, pumpkin, egg and water in your mixer or by hand. Stir in the chocolate chips.

Fill your muffins tins just to half way. It'll make 24 muffins, and you might have a little bit of batter left to make these cute mini muffins!

I like to eat them all cooled off, but my mom likes to eat them when the chocolate is all melty! Either way, they go great with a cup of milk or hot chocolate!

They would be a great Thanksgiving morning breakfast!

I'll see you next time back here in my kitchen!

So Sweet!

Cinnamon sugar is always a win!

Have you ever put cinnamon sugar on toast?!? This is even better!

4 Tbs melted butter
4 tortillas
1/4 cup sugar
1 big tsp cinnamon

Preheat oven to 350 degrees

I used a pizza cutter to cut my tortillas into 6 pieces each, then I painted on melted butter with a pastry brush. I arranged them on a sheet pan, and cooked them for 8 minutes!

They turned out just the right amount of crunchy and just the right amount of sweet! They tasted just like cinnamon toast crunch!

Welcome to My Kitchen!

I'm Ellie, and I love keeping busy! I'm keeping busy in the kitchen right now, discovering all kinds of fun recipes for kids! Recipes you can eat, recipes you can play with, and recipes that sometimes don't work!

Lucky for me, this recipe turned out really great!

Italian Fries---

This was a super easy recipe I made up when I got a craving for something savory and crispy!

You'll need:

2 potatoes, I used Russet

3 TBS Extra Virgin Olive Oil

2 TBS Italian Seasoning

Salt to taste

Get your air fryer preheated to 425, and hand slice your potatoes-- you don't even need to peel them. Throw them in a bowl and add the other ingredients, give it a good mix! Pour them into your air fryer and even them out in your basket. I originally cooked them for 8 minutes, but they weren't as crispy as I like, so I added another 4 minutes! 12 minutes was perfect!

Don't they look yummy? They really were!!! I didn't even eat them with ketchup or fry sauce because they were so tasty with the italian seasonings!

It was a super easy 20 minute afternoon snack!!

I'll see you next time back here in my kitchen!
